Dutch Oven Breakfast

  • 1 pound pork sausage or bacon
  • 1 onion, chopped
  • 1 clove garlic, minced
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 3 cups frozen hash brown potatoes
  • 8 eggs, beaten
  • 2 cups Shredded Cheddar cheese

Cooking Instructions:
Light 25 coals, and put 8 coals under 12-inch Dutch oven. Add sausage or bacon, onion and garlic until sausage/bacon is cooked and onion is tender. Add red bell pepper, green bell pepper and hash brown potatoes, stir until mixed. Cook, stirring occasionally until the hash browns are hot and the peppers are tender, about 15 minutes. Pour beaten eggs evenly over the top of the potatoes, allowing them to sink in. Cover the Dutch oven, and place 17 coals on top of lid. Bake until the eggs are firm, about 40 minutes. Sprinkle with Cheddar cheese, and continue cooking until the cheese has melted, about 5 minutes.
